I would say FRAPS, everyone uses it and it's one of the best recorders around.

Most well-known gaming commentators use FRAPS (the paid version) to record gameplay, and audacity to record audio.

HyperCam 2 is popular in the gaming industry, and now it's free. It's what I use now after non-stop looking for a high quality free alternative.
